- 2 lbyuca, peeled
- 8garlic cloves
- ½ cupGoya olive oil
- ½ cupGoya naranja agria (or lime juice)
- 1 tspsalt
How to make it
- 1
If the yuca is not already peeled, cut off the ends, split the skin, and peel down to the white flesh. Cut into 3-inch chunks. Cover with cold water and 1 tsp salt.
- 2
Bring to a boil. Cook 20–25 minutes until a knife slides through with no resistance. Drain. When cool enough to handle, pull out the woody string in the center of each piece.
- 3
Peel and smash the 8 garlic cloves with a pinch of salt. Warm the olive oil in a small pan over medium. Add the garlic and cook 1 minute until fragrant — do not brown.
- 4
Take the pan off the heat. Stir in the naranja agria (or lime juice). Taste. Add a pinch more salt if it needs it.
- 5
Arrange the yuca on a platter. Pour the hot mojo over it and serve at once.
